The Salmón Al Chile Limón–rubbed with ground red chile and lime and pan-seared–is moist and perfectly cooked; it comes with a tangy, spicy tomatillo, jalapeño and lime juice sauce. Vegetarians can dig into Calabacitas Con Queso–zucchini with corn and cheese sautéed with tomatoes, scallions, jalapeño chiles and cilantro–or the colorful Ensalada Tropical–field greens, orange slices, jicama, red onions and cotija cheese, tossed with citrus vinaigrette.
